If really wouldn’t have been a proper trip without a foodie post in mind. On my last night in Seattle I had dinner with Microsoft at Bastille, an incredible farm-to-table restaurant in the area of Ballard. Everything was so beautiful - probably one of the most perfect meals I’ve ever had. We started dinner a raw kale salad with sunflower seed hummus, picked shallots and mimolette cheese, then moved to a roasted half chicken with shaved asparagus, spring onions, arugula, picholine olives and spiced crème fraîche and pommes frites to share and for dessert we enjoyed homemade pistachio ice cream.
Unfortunately, the food cleared too quickly to grab any photos but I managed to grab some on Bastille’s roof - where all the magic happens ;) While the restaurant partners with various local purveyors from the community, they also grow many of their greens on their roof and we were lucky enough to be given a tour. Look at how lush they are! And while the photos don’t do it justice, you can’t beat the view.
A huge thank you to Microsoft for inviting me to be apart of their #ChampionsSummit.
